There are many dessert wine types. Differing names and styles have been developed around the world from Porto, Jerez region of Spain, Island of Madeira and the Swan Valley, Western Australia.

Names like Port and Sherry and the most common, followed by Maderia, Tokay and liqueur-style dessert wines.

There are some pretty strange names when it comes to sweet organic wine and sweet dessert wine names. Other people call these "sticky wines", sweet red wine,  "sweet wines" or sweet dessert wines, port or sherry. Whether the dessert wine port is fortified with brandy spirit or naturally sweet wine, names other than sherry or port wine are being used in Australia. The name tokay wine, sherry wine or port wine is not allowed under Australian labelling rules.

What is organic sweet wine?

Organic sweet wines have residual sugar. For our organic red and white wines, the fermentation process continues until all the grape sugar has been converted by the yeast to alcohol and no sugar remains. If there is sugar remaining, winemakers call this residual sugar. However, most commercial white wines have about 5 grammes of sugar added to their wines. An organic sweet wine may have grape juice added or the sweet organic wine may be fortified with a neutral brandy spirit to retain the remaining sugar from the arrested fermentation to make a white dessert wine.

What is Organic Topaque?

Topaque is a name derived from a bunch of Australian winemakers who needed to come up with a name replacement for a sweet white wine they called Tokay. Other wine names like sherry, Flor, Fino, port, chablis, champagne, and more have name replacements.

Sweet white dessert wines proved more of a "sticky point", pardon the pun. Despite more than a decade's notice, dry sherry is now called Apera and sweet tokay is Topaque as producers come up with new names. However, pronouncing "to-pak-ee" is strange, so we have called one of our aged vintage luscious organic sweet dessert wines, "Grand Muscadelle" after the grape variety.

Where does port come from?

The name port comes from the town name Oporto in the Douro region of northern Portugal.

Port is a sweet, fortified, usually red wine, but maybe white port wine of considerable renown.

What is the alcohol content of Australian fortified wine?

The alcohol content of Australian fortified wine can be anything over 17 per cent by volume, and up to 22% alcohol. In the Swan Valley wine region, we usually use 19 per cent alcohol as we find this is more stable than 17% for long-term storage in oak casks in the Swan Valley cellars. You will find that Australian fortified wine is superior to other fortified wines.

Western Australian dessert wines are made in the traditional fortified wine style. The winemakers can make a variety of styles and levels of sweetness of dessert wines.
